Teeling opened in the Liberties in 2015, the first working distillery in the city in a hundred and twenty five years, in the quarter where Dublin whiskey was made before it collapsed. The building is functional and loud in the right places, three copper stills in plain sight, and nobody pretends it is a museum.
The house style leans modern: the Small Batch is finished in rum casks, the single malts pick up wine and sherry influence, and the bar upstairs takes cocktails seriously without turning the whiskey into a mixer. It is a fair introduction to what Irish whiskey has become in the last decade rather than what it was.
Put it on a Dublin afternoon and finish the evening in the Palace Bar on Fleet Street, twenty minutes on foot. That pairing, one modern distillery and one Victorian back room, teaches more than either does alone.
