Dublin (Chapter One
It mattered because it was Mickael Viljanen's initial Dublin dining room, the address where the cooking that now defines Chapter One was first worked out. The lunch tasting was, for years, the least expensive way to eat food of that seriousness in the city.
If you want that kitchen today, the answer is Chapter One on Parnell Square. Viljanen took the whole idea north with him.
