Moran's sits at Kilcolgan, twenty minutes south of Galway city, where the Dunkellin river runs out into the bay. The Moran family have had it since 1797. Seven generations. The oyster beds are visible from the picnic tables outside the door, which is the whole point: the distance between the water and the plate is measured in yards.
What we order, every time, is a half dozen of the native Galway flat (Ostrea edulis) when the season is open, September through April. Round, coppery, almost mineral. They are slower growing than the Pacific rock and they taste of the bay they came out of. Brown bread, a wedge of lemon, nothing else. No mignonette, no Tabasco. The oyster is the dish.
Come at lunch on a weekday if you can. Weekend evenings in summer are busy and the room is small. Book, do not chance it, and take the outside table if the weather holds for twenty minutes, which in Galway is the most you should ever plan for.

- Do I need to book Moran's Oyster Cottage?
- Yes. The room is small and it is well known. A fortnight ahead in summer and on weekends, a few days ahead off season. Lunch on a weekday is the easiest table in the house and the best light.
- When are Galway native oysters in season?
- September through April, the months with an R. Native Galway flats spawn in summer and are not sold then. Pacific rock oysters are available all year, so you will always be able to eat oysters here, just not always the famous ones.
