A small West Cork smokehouse doing salmon, chicken and eel with a restraint most producers gave up.

Ummera is a small operation in a wooded valley outside Timoleague, smoking over oak in small batches and selling most of what it makes directly. The salmon is cured lightly and smoked slowly, which is why it tastes of fish rather than of smoke. The smoked chicken is the sleeper. If you are self-catering anywhere in West Cork, this is the first thing to put in the fridge, and it ships within Ireland if you are not passing the door.
