Kish Fish is a wholesale operation on Bow Street in Smithfield, a few doors from the Jameson distillery, that has kept a public counter for sixty years. Because the trade buys here at dawn, what is on the ice at nine in the morning is what the good restaurants chose. It is the best fish shop in Dublin for anybody cooking in an apartment, and the staff are used to explaining what a Dublin Bay prawn actually is to visitors who have only met them as scampi.
