Out of the Blue is a small blue building on the Dingle harbour front with a sign that says it will not open if there is no fish. That is the most honest statement in Irish hospitality, and it explains the cooking: there is no freezer, no beef, and no menu until the day's landings are known. The room is tight, the service is quick, and the fish is as good as anything on the Atlantic coast. Book, because Dingle in summer is not a town you can walk into.

Ask for the whole fish of the day, filleted at the table. Early sittings are far easier from June to September.
