Kinsale trades on being a food town, and most of what it serves is straightforward seafood done well. Bastion is the exception: a compact corner room on Main Street working a tasting format at a level that earned it a Michelin star, with a wine list that is treated as part of the cooking rather than a revenue line. It is a deliberate, sit-down-for-three-hours evening. In a town of terraces and chowder that contrast is the reason to book it.

Kinsale is a harbour town of painted terraces that has traded on food for forty years, and most of what it serves is straightforward: chowder, crab claws, hake, a terrace in the sun. Bastion is the deliberate exception, a compact room on a Main Street corner working a tasting format at a level that earned it a Michelin star.

The contrast is the point. After two days of easy seafood lunches, an evening where somebody has thought hard about every plate and every glass is a genuine change of gear, and it happens five minutes' walk from Perryville House.

Kinsale can be eaten casually for a week. This is the night that turns it into an occasion.

The cooking and the wine

Short, precise courses built on west Cork produce, with fish and shellfish doing most of the talking and vegetables treated as seriously as anything else. The kitchen is small, so the menu is tight and changes with what arrives.

The wine list is unusually good for a room this size and is treated as part of the cooking rather than a margin exercise. Take the pairing if you are not driving; Kinsale is walkable and taxis are short.

The room

It seats few people, which means the evening moves at the kitchen's pace rather than yours. Allow three hours and do not book anything afterwards.

Service is informed without being formal. Nobody performs at you, which is increasingly rare at this level.

Building a Kinsale day around it

The right shape is a long lunch at Fishy Fishy on the terrace, an afternoon at Charles Fort or out at the Old Head, and then this in the evening. Two big dinners in a row in a town this small is a waste of both.

In summer it books out weeks ahead. Fix this date before you fix anything else in west Cork.

What we would not pretend

A tasting menu in a very small room is a commitment of time and money, and there is no harbour view. If you want a relaxed seafood dinner with a bottle and a terrace, that is a different booking.

The one serious evening of a Kinsale stay, booked far ahead, with lunch kept light and the following morning left open.
