We often seek a pub around six in the evening on those expansive summer days out west. For a half-hour the room holds just a few souls, the bar itself the loudest thing in the building, before conversations fully begin. It is a moment of quiet respect for the day yielding to night.

We suggest you order a single pint, finding a seat by a window, not at the bar. The light at this hour, painting the street in oranges and soft mauves, should be your sole focus. There is no urgency yet, only this confluence of fading light and the evening ahead.

This specific atmosphere, so utterly of the west of Ireland, is something we cannot replicate back home.
